Easter Surprise...

While visiting my future in-laws for Easter yesterday, we got a less than the normal Easter surprise... An earthquake. A 7.2 earthquake to be exact down in Mexico.

I was sitting on the ground with my sister in-law watching the boys fly a kite when the ground all of a sudden started to "roll". It wasn't shaking, but more like the feeling of a water bed. After about 4 seconds, I realized that we were having an earthquake. It went on for at least 25 seconds, which if you've ever been in any sort of scary situation, feels like an eternity.

We could hear the doors on the houses around us shaking and the water in the pool was sloshing around. It was one of the neatest/scariest moments. It was neat that when the Earth decided to "talk", I was laying right there and felt every "word". But scary because it went on for so long and I've seen too many stupid movies that the ground cracks open and people fall in... yes, I'm embarrased to say that that did go through my head.

Beep Beep Beep. This just in!!!

I passed my State Board Exam! I am now a licensed Cosmetologist! I still can't believe it's already over. Years of hard work to prepare for the exam and now that I passed it, I'm not sure what to do with myself! I think I'm going to go back to school and get my degree! Why not, right.

Back From Vacation

State Board Exam Date

So... I got my Exam date! March 18, 2010.

Holy Moly! That's only 2.5 weeks away! I've been waiting and waiting for the letter to come in the mail and all they give me is 2.5 weeks notice??? There's so much I need to be doing! Ahhh. All of a sudden I feel like all of the information I have obtained for two years is flooding out of my head. What does Tinea Corporis mean? What is the only living part of the nail? Where do you apply eye shadow for wide set eyes? AAAAHHHH! I know what I'm going to be doing in all my spare moments... studying like a mad woman!

President's Day Weekend

Our weekend started out by me making a bacon and cheese omelette and Ted made a berry smoothie for breakfast. So yummy! We watched the first disc of Shackleton and then went for a beautiful bike ride through the town. When we got back, Ted went with his buddy to fly kites down in Seaport Village while I opted to stay home and get our place back in order. We had wood floors put in so we were still trying to get all of our things in their places. Later on, we decided to take one of our friends out to dinner since she wouldn't be here on her actual bday (she was going to be in Thailand). So we tried Hamilton's but the line was about 40 people strong so we headed over to Station. I got the black bean burger with sweet potato fries and Ted got the turkey burger with tots. Soooo good! Then we rode our bikes home and I cut and colored my friends hair for her trip. Got to bed pretty late!

Sunday, (Valentine's Day) Ted woke up early and let me sleep in (how sweet). He made his famous spaghetti early in the morning so it could simmer in the crock pot all day. Once I got up and he made pancakes and bacon strips for breakfast. Perfect way to start our V-Day. Then we watched the second disc of Shackleton and just vegged out on the couch. We rode our bikes to the grocery store to pick up a few necessities for our dinner and came home and ate like kings! We had salad, garlic bread, and the most amazing spaghetti! I made little meatballs to go on top and we were surprisingly able to save some of them for meatball subs for dinner on Monday. It was a perfect V-Day if you ask me :)

Monday, Ted had to work but I had off. I just relaxed, didn't get out of bed till around 11. Actually woke up and read a chapter of my book . Snuggled with my kitties for a bit and then finally made my way to the shower. It was nice. Got some cleaning done and met up with Ted for lunch at Island's. Mmmm. So good. Then ran over to Walmart to get some essentials. Then home . We went for a nice long walk in the evening.

Perfect weekend! Just perfect!

They look like tulle. They will look perfect for our "Open Air" tent that we are making for our Reception. We found tulle bows at the dollar store to accent the curtains.

Urban Bike & Social Club

I have offically been introduced to riding in a group... and I love it! I wasn't sure how I would do but I think I did pretty well for my first try! Ted and I met up with our group around 6pm and had a very enjoyable ride which ended with a beer at Hamilton's. Perfect ending to the night! I will definately be joining in the next ride!

Application Adventure

We received our State Board Applications in leu of a Certificate at our Graduation Ceremony. They were all labeled and ready for our $125 contribution to the State of California (at least that's how I see it).

I got all dressed up for work because today is a very special day to drop the application off at our local Post Office. I'm one step closer to getting my license!!!

Drive up, park, walk to the door and realize that they have changed their hours from 9:00am to 10:00am. Darn, but it's okay. I'm just a little bit late for work and I can still drop it off at our Front Desk Mail Drop!

The guy at the Front desk was kind in taking my picture dropping off my application. He must have thought I was a little looney. I mean, who does that? I just wanted to document my journey!

So, it's off in the mail. Hope I get my date soon! I'll keep you posted!

Roqulette Anyone?

Just like most folks, I had no clue what a Roqulette was. Well, how can you go wrong with a half wheel of expensive cheese, an assortment of goodies to dip into the cheese and great friends to share it with?

A Very Merry Christmas

It feels like an eternity since I've been on here!

So much has happened.

I graduated Cosmetology school

Had a wonderful time with my mom and brother

Had a fun Ugly Christmas Sweater Party (I'll post pics soon, promise)

Shared time with the future husband's family over Christmas

Stopped eating everything in front of me & now trying to work off the um, "winter weight"

Enjoying my free evenings with Ted

I hope everyone had a blessed and fruitful Holiday season. Now on to 2010... Hope the economy will pick up soon and let all of us get our lives back to normal :)

Lack of Postings...

Work has been totally nuts. Haven't even had the time to think of a blog post for the last week or so!!! I don't like it one bit!

Well, my family is due to arrive tonight at 11:30pm. They aren't able to stay through the holidays but it's wonderful to get to see them around Christmas! My Graduation is this Friday. It's so weird. I've been counting down this Graduation for two years now and now that it's here, I'm not as excited as I thought I'd be. It's almost sad that this long chapter is now finished and I have to move on, find a job and probably not talk to most of the girls I spent two years of my life with. It's bitter sweet. I'm very proud of myself for actually finishing. There were plenty of times that I just wanted out but some how, some way I have made it to the bitter end! And that sure does feel good!

We've got lots of fun stuff coming up... I'll keep you posted!

A Loss...

during the holidays seems to affect me more so than any other time of the year. Early this morning, Ted's Grandpa passed away. I hope it was a peaceful pass into heaven! He suffered immensely from emphysema and lung cancer due to smoking his whole life. He was in so much pain and now that pain has been taken away. But it still is hard to imagine life without him. I didn't know him as well as I would have liked but the loss is still difficult and my heart goes out to family and friends who are affected by his loss.

Grandparents are such blessings, aren't they! I feel so blessed to still have my two Grandmothers and one Great-Grandmother. And Ted's two Grandmothers.

Tell your Grandparents that you love them!

{recipe} Easy Chocolate Silk Pie

This is one of the easiest pies you can make for the holiday season!

Ingredients:

1 package Instant Chocolate Pudding

1 container Cool Whip

1 premade Pie Crust

1 1/2 C Cold Milk

Chocolate bar or Cocoa powder (optional)

Directions:

Whisk pudding mix with milk for 2 minutes. Spoon half into pie crust.

Mix 1 C Cool Whip into remaining pudding mix. Spoon into pie crust.

Top with remaining Cool Whip. Shave Chocoalte on top or dust with cocoa.

Refrigerate for at least 3 hours to set.

I have been saving these little Martinelli's apple juice jars to store all of my sewing supplies, ie: buttons, safety pins, and small spools of thread. I have like 10 left over so I started brain-storming... and then it hit me! How cute would these little jars be slightly filled with glass beads or sand and place a single flower or a candlestick and place them in a row down the center of your table...

Wonderful Weekend

To start off this past weekend, Saturday morning I was asked to help do the hair for a family for their daughter's Quinceanera. Basically, curls, curls and more curls. I'll post the pictures of the updo's when I learn how to transfer them from my phone to the computer. :) It was a lot of fun! Then, later that day, my friend came over to get her hair and makeup done for a wedding! After that, a couple of friends came over and we had some wine and pizza. Mmmm. It was so yummy!

Sunday, Ted and I made some Soyrizo and egg tacos for breakfast and decided to ride our bikes up to the Hillcrest Farmers Market. That was great! The food was amazing! Lots of fresh veggies and fruits to look at! We left with our bellies full of gyros, one HUGE pear and a peach, baby heirloom tomatoes & some apple scented inscence. Then off to Ross to do some perusing. We didn't really find anything so we left and went to get some gelato. Walked around for a bit. Then rode our bikes home! Okay, I know you're not supposed to brag on yourself, but here I go...

This was the furthest I had ever ridden my bike. Over all, it was great!

Then we came home, watched True Blood and made some Andouille sausage with white cream pasta. It was so good!

Recession Music

Much Anticipated Invitation Suite

So, let me give you a little back story as to why we chose "bikes" as our theme for our Wedding Invites. Ted loves to ride his bike! Everywhere! I, on the other hand, was never a bike riding kinda gal. That's until I met Ted. He enlightened me about the beauty of riding bikes. No gas money wasted, getting exercise and most of all, spending time with loved ones! Who wouldn't want to ride a bike? It was very tough at first... I mean cursing anything that stood in my way, wanting to punch Ted for making me do this awful thing he called bike riding... but as time went by and as I got in better shape, it (I can't believe I'm saying this) actually became fun and I now understand why people love it so much...

I've Been Pondering...

the meaning of MY life for almost all of my life but as I get older, it seems to be pressing on me harder and I find myself thinking about it on a daily basis.

As most of you know, my biggest fear in life is ironically death. I'm so scared of death because it is inevitable. It IS going to happen but I don't know when, where, and under what circumstances. I'm slowly learning to accept death as an event that has to happen because I was born. I'm scared of a lot of things... flying in airplanes, heights, horror films... and I realize that I'm scared of all of these sort of things because I'm scared of dying. I don't want to die in an awfully painful death (I don't know who does) but rather die in my sleep at a very old age.

I guess the best thing I can do is really try to enjoy every single day that I'm on this earth and stop thinking about dying, it's going to happen so why stress about it?

Things I really want to accomplish in my life:

Become a very successful Cosmetologist and stay happy
Become a wife and great mother
Own my own home, and be able to make it perfectly mine (and Ted's of course)
Travel as much as possible, eat, drink and enjoy each place to the fullest
Stay in great health so I can do anything I set my heart to do
Find the meaning of my life!

Rest Of The Week

So I ended on Tuesday in my last post... We actually didn't wind up going to the Zoo but went to Walmart instead to print out some pictures for this awesome frame Ted picked up. We had a great dinner and watched (what else) X-Files.

Wednesday, our friends came over for some veggie lasagna and a yummy salad. This was the first time ever making lasagna and it came out wonderful (if I say so myself)!

Thursday, we went to Balboa Park for Screen on the Green. We brought a huge picnic on our bikes and met up with a friend. It was pretty neat and best of all, free!

Friday, we had what I'd like to call, one of the best date nights EVER! Ted ordered Indian food and had it delivered. When it got to us, we packed it all up on our bikes and rode over to Balboa Park and sat under a beautiful tree and had a picnic. The food was great but the company was better!!! When we finished, we rode our bikes right around the corner to the Zoo. We finally got a chance to do that Nighttime Zoo thing and boy was it cool! We were like the only ones there once it got close to closing time and we were just cruising around. It was so much fun. Just the two of us.

Saturday, we went up to Ramona for Ted to do a Rocket Build (model) and we also celebrated his grandma's 82nd birthday. We took her out to Denny's and Ted had the waitresses sing her happy birthday with some icecream. I thought that was so cute!

Sunday, we slept in, made some breakfast tacos, went to Target to do some much needed shopping and then came home and did some also much needed laundry! Watched some X-Files and went to bed!

One Week Off!!!

And I'm loving every minute of it!!!

As you know, I'm in Cosmetology school. It's one of the longest, most difficult things I think I've ever done... Every single night from 5:30-9:45pm, only one week off every couple of months... but there is an end in sight! I do see the light! I will be finished with my program December 18th. To most people that seems really far off but to me, after doing this for over a year 1/2, four 1/2 months seems like cake! Anyways...

Ted and I had a great weekend and have a ton of plans for this week.

Friday, I got out of school early because the class ahead of us graduated so we went over to some friend's house and had a great dinner and listened to some great music.

Saturday, we slept in, had a wonderful breakfast and then went for a bike ride. After that, we went to the High Dive for some amazing burgers (the spicy reed)... then we rode our bikes over to Record City and then home for some Coconut Curry and Panko chicken that I made. MMM!

Sunday, we made some breakfast and then our friends came over for a haircut and color. That was fun!!! Then Ted and I headed over to Sunset Cliffs for some mountain boarding *(just Ted) and we were able to see the beautiful sunset the cliffs are famous for. Then went home and watched an amazing french bug documentary called Microcosmos.

Monday, had to work but afterwards we went up to his Grandma's house for some spaghetti. It was so nice and there was another beautiful sunset that we got to see!

Today... well, today we're going to the Zoo after Ted gets off of work. They do this nighttime at the Zoo thing and it should be a lot of fun! I'll keep you posted on my amazing week to come!

Yesterday was a great day! It started as usual, went to work, came home, my friend Cody came over and we went to grab a sandwich at a local coffee house, then Ted came home early and surprised me with a cute card and a giftcard for Target! For those who know me, I consider that to be the BEST gift ever! I went to school for 2 1/2 hours and snuck out to come home for some sushi with friends. It was awesome! The food was outstanding, the drinks were great and of course the company can't be beat! All in all, this year is one of my favorite birthdays after all.

Thank you Ted for making me feel like a real special person on my birthday!!! I love you!

It's My Birf-day

Hello everyone! Today I turn a whopping 26 years old...

I have always loved my birthday(I still do, but)...this one's different! It's weird! In the past I have always wanted to make a big deal of my (actually anyone's) birthday but this time, I'm okay just spending my birthday at work and school and coming home to get to sleep early... I guess I'm realizing that I am getting older and it's a weird feeling!

Anyone else feel this way?

*On another note, I had a wonderful weekend! I did the hair/makeup for Ted's sister's wedding on Saturday. She looked so beautiful! I'm so proud to call her my sister (in law)!!!

*On Sunday, Ted set up a brunch with some of our friends and we rode our bikes up there. After brunch, we stopped by Extraordinary Desserts to pick up a birthday dessert and we took them over to a grassy knoll in Balboa Park. It was so sweet! We checked out the Botanical Garden area and then headed over to the Photography Museum to admire Ansel Adams' work. Then we rode home and watched an "X-Files" marathon, then had some leftovers for dinner and watched The Fellowship of the Ring! It was a perfect day!

Another Wonderful Weekend

Well, another weekend has come and gone...

Saturday, Ted and I rode our bikes up to the Zoo and checked out the new Elephant Odyssey (which was amazing!) and then we attended a house party with some friends. We had a blast! The weather was perfect! The food was awesome! And of course the drinks were flowing :)

Sunday, we made some breakfast and watched a Netflix. Then some of our friends came over to visit and have some lunch! Then Ted's sister and her fiance came over to listen to the wedding music Ted has created for the two of them. It makes me cry just listening to it! How cool is it that they get a completely custom, one of a kind, wedding ceremony music? Anyways, I did his sister's hair and we talked about what we were going to do for makeup on the "big day". Then we walked up to Luigi's for some pizza and stopped by the bakery for some dessert!

All in all, the weekend was GREAT!

I'm In Shock!

First Farrah then Michael...

Two icons pass away and leave us all speachless! It's completely surreal to me that Michael Jackson is no longer with us. It makes me so sad for him and his family that he was ridiculed, had everything taken away from him and now that he's dead... all of the media is jumping on it and praising his life. It's just not fair that the media can push someone over the edge and once they go over, mistake it for just another news story!

A Sad Loss...

Early this morning, the beloved Farrah Fawcett lost her long battle with cancer. My heart goes out to her family, she was only 62. While I was working at a restaurant called The Fish Market, she and her boyfriend, Ryan O'Neal came in to eat two days in a row. She looked extemely tired and very skinny. But there was no doubt that it was her! I actually took them their drinks... her voice was weak but she was very pleasant. In some way, even though I only met her once, I feel deep sympathy and I feel a loss. Kinda weird, I know!

High Fidelity

I've seen the movie a million times but I just never got around to reading the book... until now. I just finished it last night and (in my opinion) it was better than the movie! They did a pretty good job casting and such but I think it would have been much better in London (where the book takes place) because a lot is missing. There's so much that doesn't "transfer" if you get what I'm saying! Anyways, I did enjoy it and if you click on the "book" link above, it's on Google Books for you to read!

Mock Board

Do you ever have days that you stress about them getting here for so long that once they're here, they're already gone? That was yesterday for me.

I am in Cosmetology school and we had a "mock board" exam yesterday (meaning our teacher treated this midterm as if we were at the real State Board exam. There was no talking, we used real people to do our timed procedures on, and we were graded on every single thing we did.

I'm normally okay under pressure but right before we started, my friend hadn't shown up yet and I started to panic. She was on her way through traffic but we were starting already. She showed up literally in the last minute but everything worked out just fine. I got my confidence back after the first procedure and I think over all I did very well. I completed 4 out of the 5 procedures. The last one was what they call a "State Board Set" and this is to demonstate all hairstyling techniques without tools. You fingerwave the entire head, then use rollers, stand-up pincurls and forward and backward pincurls. This was my first time doing it on a real person, we normally do this on our doll heads. Well, I almost finished! I had 4 more pincurls to do when the buzzer went off. Oh well! I did my best!

MDA & Father's Day

On Saturday, we were invited to the MD Tailgate BBQ and a Padres game. It was pretty good last year so we decided that we'd go with Ted's family and a couple of friends. The BBQ was great! Drinks and icecream were free! The weather was overcast and sorta perfect actually. We decided to go to a tavern near by in between the BBQ and the game because we were craving nachos and wanted to get them for a decent price... not stadium price. We sat at a booth with the game on right behind us and we decided to just stay there and watch the game! All in all, the day was great!

Then, Sunday morning, our friends came over for a french toast and bloody mary breakfast! We met up with Ted's parents to take the hike up to see his grandparents (about 1.5 hours away). The weather couldn't have been nicer! It was about 85 with a perfect breeze! We had BBQ again but who's counting :) It was such a pleasant Father's day!

Pillow Talk

{recipe} Chicken, Rice and Veggies

As a student, I try to stretch out the dollar to the max and have come up with a solid meal with just a few ingredients.

Ingredients:
4 frozen chicken tenders, defrosted and cubed
1 cup frozen veggies (any combo)
1 box Rice a Roni (I used low sodium chicken flavor)
4 cups chicken broth or stock
1 can cream of chicken
any kind of poultry seasoning (I used one called roasted chicken)
pepper
hot sauce (I love Tapatio)

Directions:
Boil 1 cup of chicken broth in large skillet. Throw in veggies (frozen is fine). Cook for 3 minutes. Then throw in cubed chicken. Sprinkle with seasoning and pepper. Reduce heat to Medium.

In a smaller pot, follow directions for rice but instead of water, use chicken broth. Simmer for 15 minutes and then pour rice into larger skiller with chicken and veggies.

Pour in cream of chicken and stir everything together. At this time, I added hot sauce. Let it simmer for another 5 minutes and then serve.

It's the easiest, cheapest meal and it's very flavorful! When you need to feed 2-3 people for under $10, this is the best option! Enjoy!

{recipe} Yellow Curry Chicken & Veggies

I found myself craving Thai food but my expenses aren't willing to cooperate lately so I searched around the house and came up with a pretty tasty version of my own.

Ingredients:

1 lb frozen chicken, defrosted and cubed
1 pack frozen veggies, defrosted (I used peas, carr, greenbeans, broccoli)
1 cup frozen potatoes, defrosted (I used potatoes o'brien)
1/4 cup chicken stock or broth
1 large onion, diced
2 cloves garlic, minced
1 Tbsp ginger (I used powdered ginger)
2-3 Tbsp cayenne pepper
1 Tbsp garlic salt
1 lime (I used the kind in the container)
1 can coconut milk
3-4 Tbsp yellow curry powder
vegetable or canola oil

Directions:

Heat oil in a large skillet on Medium. Saute onions and garlic until translucent. Throw in potatoes to brown them. Sprinkle with garlic salt and cayenne pepper. Put in veggies and place a lid on top. Cook for 5 minutes. Then pour in chicken stock/broth and bring to a boil. Put lid back on and cook another 5 minutes. Pour in coconut milk, yellow curry, ginger, and squeeze in lime. Put lid back on, lower the heat to Low and simmer for 10-15 minutes.

Serve over jasmine rice.

Let me just brag a little!

My future husband is an incredible guy! His sister asked him to write & record her entire wedding ceremony music. This is quite a challenge (he's never done anything like this before) but he was ready to take on the challenge and the music he's come up with so far is beautiful!

I feel so lucky to be engaged to such an amazingly talented musician and can't wait to see or actually hear what he has in store for me over the next 60 or so years.

Two Save The Dates?

As you all know, we had some beautiful engagement pictures taken a little while ago and I had plans to send out an Engagement Announcement to everyone. Well, we got engaged in December and it's already June... so an announcement doesn't seem necessary anymore but I still want to send out an "announcement" of our wedding since we are having a very intimate ceremony (50 people) and there are a lot of people that won't be joining us for our special day. I don't want anyone to feel completely left out, you know?

So, Ted and I have come up with a plan. Send out 2 Save the Dates.

The first one is more or less a "Wedding Announcement" (including one of our engagement pictures) and the second will be the actual Save the Date invitation.

We got in our Shutterfly order of 100 pictures for less than $15. The quality isn't amazing but it is definately worth the $15!

Back To School

I used to love school. I used to pretend I was a teacher and loved grading pretend tests and writing on the chalk board. I thought I was going to become a teacher when I grew up.

The older I get, the more I really don't care for school and realize all of the politics and complete lack of interest (on the teacher's part) that is involved. I want to be finished with school so I can do something else with my life. This Cosmetology program is a LONG 2 years... going to school every single night from 5:20-9:45pm. It really takes a toll on my moral and ambition!

Wish me luck. Tonight I start my "most challenging" semester. I hope I have a change of heart soon and begin to really love school again. I think that's the only way I'll be able to make it through the next 6 months!

Ted's Birthday

I was fortunate enough to have Ted's birthday off from school... I secretly planned for us (including some of our friends) to have dinner at this awesome Indian place called Monsoon. We walked down from our house, only a 15 minute walk, and had some amazing dinner with friends. There were a few "highlights" of the evening but my favorite was one of Ted's birthday gifts from Wes and Rita. It's called an "Uglydoll" and her name is Fea Bea.

Mind you we are in a nice restaurant and Fea Bea is placed in an empty chair at the table... our food comes and for the last entree to be dropped, our friend Mark points to Fea Bea as the recipient. We all started laughing so hard! It was ridiculous!

Also, there were balloons on the table and Ted moved them to take a picture and one of them hit the chandelier and popped. It was so loud that one of the babies at the next table started crying... Just a typical night out for us.
